To make the pilaf: Pour the olive oil into a medium sauce pot and set over medium heat. Once the oil is hot add the onion and saute for 3 minutes, until just beginning to turn translucent.
Meanwhile, cook the broccolini and salmon: Toss the broccolini with olive oil and a large pinch of salt and pepper. Scatter on the lined baking sheet and roast for 5 minutes while you prepare the salmon.
To finish: Remove the pilaf from the heat once the lentils are cooked through. Stir in the diced tomatoes, basil and cheese. Taste and adjust seasoning as needed.
